Dill: Anethum graveolens - Seeds - whole or ground and dried Leaves and fresh Leaves. Anti - Spasmodic, Carminative & Stomachic for the Digestion. Dill Carrots: Great flavour fresh - Pour a Tablespoon of fresh Yoghurt over a dish of lightly steamed fresh Carrots and sprinkle chopped fresh Dill Leaves over the top.
Fennel: Foeniculum vulgare - Seeds & Vegetable but the Leaves & Seeds are less useful. Grows with a very small Root but long Stems & Leaves. Aromatic, Anti - Spasmodic, Carminative, Diuretic, Stimulant, Galasctagogue, Expectorant & Rubefacient and a good Stomachic that ensures proper Digestion. Good to Chew at the end of a meal as it helps to relieve Colic & Flatulence. Diuretic it encourages Urine flow and loss of Toxins via the Kidneys. Encourages the flow of Breast Milk. Calming & Soothing to the Lungs and Bronchial Tubes. Expectorant to expel unwanted Mucus and good for Coughs & Bronchitis. Use as a Gargle then swallow to get the benefits. Externally: For Muscular Pain & Rheumatism and as Eye Pads to treat Conjunctivitis & Inflamed Eyelids.
Fenugreek: Trigonella foenum - graecum - 3 dimensional shaped seed - Spice and used in Curries. Mucilaginous Demulcent, Expectorant, Galactagogue & Tonic. Not really needed for the Digestive Tract. As it is a mild Bitters and gentle on the Digestive Tract and is more useful as an Expectorant and for Sore Throats. Gargle and swallow. Also can be added to Curries. Externally: Wounds, Cuts, Boils and other Skin Conditions.
Flax / Linseeds: Linum usitatissumum - Add to Food.
Garlic: Alluim savitum - Garlic Soup: Mince 6 large Cloves of Garlic and cook gently in two Tablespoons of Butter and do not let it Brown. Sprinkle in a Tablespoon of Wholemeal Flour and mix thoroughly and slowly blend in a litre of Stock and bring to the boil. Add 2 Bay Leaves, a pinch of Mace Powder and season with freshly ground Black Pepper & Salt and simmer for 15 minutes and serve. Decorate with fresh Coriander Leaves.
Ginger: Zingiber officinale - Used in cooking or pour boiling water on it to maker a refreshing Drink.
Ginseng: Panax ginseng - Tablets or Capsules or as a Herb Tea. Anti - Depressive, Demulcent, Stomachic & Stimulant. Used mostly to give an Energy boost. Only has a modest use in Detox.
Horseradish: Amoracia rusticana - Root used in Horseradish Sauce with Beef and other Red Meats. Carminative, Diuretic, Mild Laxative & Stimulant. · Aids Immune System for Colds & Fevers. Carminative assists the Digestive System especially after a large meal to ease Griping Pains. Diuretic to aid the Kidneys and the flow of Urine. Simple Sauce: Grate Horseradish and add Mayonaisse. Horseradish Sauce: Grate Horseradish until you have 4 Tablespoons full and add 100 ml of natural Yoghurt and a dash of freshly squeezed Lemon Juice. Season with Salt and freshly ground Black Pepper. To make it creamier without Cream add a small amount of Olive Oil. To get a more gentle flavour add some cooked and pureed Cooking Apples.
Irish Moss: Chondrus crispus - Dried Seaweed. · Infusion: Pour boiling water on it. Useful for Digestive System & Bronchial Infections.
Juniper Berries: Juniperiers communis - Dried Ripe Berries. Iinfuse and drink. Put in boiling water.
Kelp: Dried Seaweed. Powder, Granules & Tablets. Rich in Iodine and other Trace Minerals. Stimulates & Tones the whole Metabolism. Benefits Energy, Well Being and for Detox.
Lemon Grass: Cymbogon citrates - Vegetable. Makes a refreshing Tea after pouring boiling water on it. Adds a delicate Lemon flavour to Savoury dishes instead of Lemon. Refreshing and a Mild Stomachic.
Marjoram / Sweet Marjoram / See Oregano / Marjorana hortensis.
Mustard: Brassica alba & Brassica nigra. (Use the English one.) Powder or Paste by adding Water. Diuretic, Emetic, Irritant, Rubefacient & Stimulant.
Nutmeg: Myristica fragrans - Spice. Powder or a large Brown Seed to be grated. Aromatic, Carminative, Hallucinogenic & Stimulant. Assists Digestion and reduces Wind & Flatulence. N.B: Only to be used in small amounts to avoid Hallucinogenic effects. Spiced Pumpkin Soup: Cook Pumpkin soup and add a pinch of Nutmeg to give a better flavour and aid Digestion.
Oregano / Wild Marjoram - Orrganum vulgare. Dried Herb. Fresh Herb in bunches. Anti - Septic, Expectorant, Emmenagogue & Rubefacient. Cleans Lungs and reduces a Fever. Use as a Mouthwash to treat local Infections or Gargle for a Sore or Infected Throat. Can be made into a Tea. Can be added to Food to treat Headache. Oregano & Parsley Sauce with Tomato: Warm 1 Tablespoon of Olive Oil. Crush 3 Cloves of Garlic and add to the Oil but do not allow to Brown. Chop and add 4 Tomatoes and cook until they are soft. Then add 1 Tablespoon each of finely chopped fresh Oregano & Parsley. Cook for another 5 minutes and season to taste.
Parsley: Petroselinum crispin - Leaves Fresh & Dried. Carminative, Diuretic, Expectorant & Emmenagogue. Use generously in sauces and seasoning. Adds flavour and aids Digestion. Rich in Vitamin C and a good Diuretic. Easy Parsley Sauce: 250 ml of Liquid (Cow's Milk, Goat's Milk, Soy, Stock to Water) in a saucepan. (Goat's Milk good.) Add 25gr of Flour (Wheat Flour but Barley Flour is good) 25 ml of Olive Oil. Stir briskly and bring to the boil and simmer for 10 minutes until thickened and cooked. Then add any Herbs to suite. Parsley Salad: Finely chopped Parsley and add a small amount of cracked Grains and a few chopped Vegetables. Tabbouleh: 300 gm of cracked or crushed Wheat in a bowl. Pour on sufficient cold Water to cover it and allow to stand until the Wheat has softened. Strain and squeeze to remove excess Water. Add double this volume of fully chopped Parsley, 3 Tablespoons each of chopped Lemon Balm & Mint, half a cup of chopped Chives and 1 ripe Tomato chopped. (Must look like dark green dish of Parsley, if not add more Parsley. Combine Olive Oil & Lemon Juice for dressing. Combine with the Salad 3 to 1 to lightly coat the ingredients. Season with Black Pepper. If Wheat is not to be used then use cooked Brown Rice or cooked Buckwheat - (Not related to Wheat.)
Peppermint: Merntha piperita - Best Carminative. Herb Tea and Drink after a heavy meal and when you have a Cold.
Spearmint: Mentha spicata - Anti - Spasmodic, Carminative, Stomachic but not as good as Peppermint. Mild Diuretic. Usually used to make Mint Sauce and served with Lamb. Minted Soft Cheese: Use Ricotta, Cottage, Cream or any type of Soft Cheese. Goat's Milk Curd can be used also. Large bunch of fresh Mint, Strip the Leaves from the stems and chop finely or puree the Leaves in a food processor and combine with Soft Cheese. Proportions are up to you. Season to taste. Other Herbs can be included such as Garlic or ground Celery Seeds. Serve with a Salad, lightly steamed or stir - fried Vegetables.
Pimento: See Allspice.
Pumpkin: Cucurbita pep -. Seeds are Anthelmintic. Eat plain or added to stir - fry dishes or Salads. Serves as Nibbles before a meal while having a Carminative Aperitif. Carminative Aperitif: Any Alcohol can be used but best with Sherry or White Wine. Choose Carminative Herb Seeds to suite and add to the Alcohol and allow to steep. (If Wine use fairly soon or it will oxidize) Sherry will last almost indefinitely. (Aniseed, Carraway, Cumin, Cardamon, Coriander & Dill are delicious.) You can also soak Slivers of Ginger in the Sherry and make Ginger Wine. Or add Juniper Berries to Gin.
Quassia: Picrasma excelsor - Spice. Do not confuse with Cinnamon Bark. Anthelmintic, Bitter, Sialogogue & Tonic. Can add to Detox regime.
Rosehips: Rosa canina - Herbal Tea Fruits & Seeds are mildly Astringent, Diuretic & Laxative. Drink as a Tea to assist to clean out the Digestive System & Kidneys.
Rosemary: Rosmarinus officinalis - Leaves. Aromatic, Anti - Spasmodic, Anti - Depressive, Anti - Septic, Ccarminative, Parasitide & Rubefacient. Improves Digestion and eliminates Parasites and has other uses.
Saffron: Crocus sativus - Thin Red Filaments or Stigmas. Expensive. N.B: Look Out for Substitutes. Anodyne, Anti - Spasmodic, Aphrodisiac, Emmenagogue, Expectorant & Sedative.
Sage: Salvia officinalis - Usually combined with Thyme. Anti - Septic, Astringent, Anti - Spasmodic, Carminative and so aids Digestion.
Tarragon: Artemisia dracunoulus - Delicious Flavour. If growing use the Plant instead of the Seeds. Diuretic, Stomachic and good in a Detox regime.
Turmeric: Curcuma longal - Yellow Coloured Powder used in Curries. Rich Anti - Oxidant (Main Use.) Mild Aromatic & Stimulant. Add generously Tablespoons full to a Curry.
Thyme:
Valerian: Valeriana officinalis - Herbal Tea. Anti - Spasmodic, Carminative, Hypnotic, Hypotensive & Sedative. Used to relax and sleep well. Used to relieve Cramps & Intestinal Colic.
