PARSLEY: Cultivation: One of the first plants to appear in Spring and flowers and seeds in its second year and is a Biennial plant with a thick taproot and a rosette of tightly curled, serrated Aromatic Leaves on long petioles in the first season. The stalks bear umbrella - like clusters of small yellow - white flowers and green - brown seeds in the second Summer. Plant the Seed in the Spring or Autumn in humus rich, well drained soil in full Sun or semi - shade and also self sows easily. Remove the Flowers to promote Leaf growth and pick the Leaves and dry quickly throughout the year and collect the Root in Autumn from 2 year - old plants. (Curled 20 - 30cm high, Italian 40 - 50cm high, Hamburg 50 - 6-cm high.) Requires well drained rich soil with the moisture retained and sow the seeds direct in short rows in Spring, Summer or early Autumn in rows 20cm apart and thin the seedlings to 5 - 7cm apart. The seeds usually take 3 - 4 weeks to germinate so keep the soil there damp and when established use Nitrogen fertilizers or Liquid feeds to promote leafy growth. Chop the Leaves and young Leaf Stalks to flavour Fish, mashed Potatoes, Mornays, Omelettes, Pastas, Poultry, Salads, scrambled Eggs, Soups and Vegetable dishes. Use fresh Sprays as a garnish and can be mixed with Chervil, Chives and Tarragon and the Fresh Roots of Hamburg can be grated into Salads or cooked as a Vegetable. Cultivation: A small pungent easy to grow low growing herb with dainty and elegant appearance with circlets of mauve flowers in Spring with small smooth Leaves and a fresh sweet scent and makes a delightful ground cover. Products: the Leaves and Oil. Used to Treat: Amenorrhoea: Coughs: as an Infusion. Indigestion: as an Infusion. Insect Repellent: as it repels Fleas as an Oil or the Oil neat or diluted can be rubbed on the Skin against Mosquitoes or dabbed on shelving to repel Moths from clothes or in the pantry against Ants. 200ml of Olive or Apricot Kernel Oil in a non - Aluminium saucepan and cook until the Oil is well heated and stir in a heaped teaspoon of Dried Pennyroyal and simmer over a low heat for 40 minutes. Filter out the herb and bottle the Oil and apply to exposed Skin. Menstruation / Obstructed: Specific as the best and most reliable. Mouth Wash: as an Infusion on a daily basis.
